Salads are super healthy, so good for you and not just for summer… I can and do eat a salad everyday if I can and sometimes it is hard to come up with an interesting combination.
But fear not, because David Bez has done the work for you.
Feeling very unhealthy and lethargic and two stone heavier after a move to London, he set himself the task of making a salad every day at work. The main points being that it was quick to make, easy and healthy. Documenting his salads on his blog, his labour of love became a book

Goat’s cheese, melon, blueberries & spinach
For the salad, assemble:
50g baby spinach
100g charentais or cantaloupe melon, chopped
handful of blueberries
50g firm goats’ cheese (or brie), chopped
1 tbsp shelled hemp seeds
handful of fresh mint leaves
For the dressing, mix:
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
pinch of salt and pepper
RAW ALTERNATIVE: Replace the goats’ cheese with pomegranate seeds, grapes or raisins
