What’s your favourite breakfast?
I know a lot of people struggle with breakfast, but it really is worth crawling out of bed a few minutes earlier to make a meal fit for a king…
I’ve bad news for you if your breakfast of choice is a double espresso and a Danish! It acts like rocket fuel, giving fast energy but burning up fast – leaving you drained and hungry by mid-morning.
Before you reach for your usual box of cereal or a pastry or muffin, it’s worth remembering that protein really helps to keep you going for longer, so try to incorporate it into your morning meal if you can.
So here are some of our favourite breakfasts!
100g bag spinach
400g can chopped tomatoes
1 tsp chilli flakes
Heat oven to 200C/180C fan/gas 6. Put the spinach into a colander, then pour over a kettle of boiling water to wilt the leaves. Squeeze out excess water and divide between 4 small ovenproof dishes.
Mix the tomatoes with the chilli flakes and some seasoning, then add to the dishes with the spinach. Make a small well in the centre of each and crack in an egg. Bake for 12-15 mins or more depending on how you like your eggs.
Oats, flaxseed, blueberries & almonds
After microwaving the oats, add ground flaxseed, blueberries, and sliced or ground almonds. You can add a little cinnamon and honey or agave syrup for a bit of sweetness. This can be done while the kettle is boiling and is very tasty!
Super juice smoothie
If food is hard to stomach first thing, then try this smoothie. Don’t be put off by the ingredients, it really does taste good and is very refreshing. If I’m sharing this with my family I tend to leave out the wheatgrass and spirulina (you can take them in supplement form instead) as they are an acquired taste.
½ lime, peeled
2 Golden Delicious or Royal Gala apples
¼ medium cucumber
¼ ripe avocado
10oz fresh wheatgrass
1 level teaspoon spirulina
1 capsule acidophilus bacteria powder
Juice the apples, pineapple, cucumber and lime. Put the avocado flesh into a blender along with the ice, wheatgrass, spirulina, and the friendly bacteria powder. Blend everything until smooth, pour and enjoy.
